Watermelon salad?! Have you ever?? I thought the same at first, but after my dear friend, Rosaline, pushed me to give it a try, it has become a family favorite at our summer BBQ’s that we often host. After a couple of tweaks, here is my popular watermelon salad. It’s super refreshing and has your guest’s palettes pleasantly surprised by it’s tangy, savory flavor.
Ok. Let’s get started!
6 cups cubed seedless watermelon
1 tablespoons minced fresh mint
1 tablespoon lemon juice
1 tablespoon olive oil
1 teaspoon balsamic vinegar
2 teaspoons sugar
pinch of salt
dash of pepper
sprinkle of feta cheese
First, I prepare the watermelon. Cutting the watermelon into perfectly appetizing cubes has never been easier withWindmill Watermelon Cutter. Next, mix the oil, balsamic vinegar, lemon juice, sugar, salt and pepper in a bowl and pour it evenly over the cubed watermelon. Garnish with feta cheese and minced fresh mint for the perfect finish.
